Pumpkin Oatmeal Chocolate Chip Cookies

Yaa whooo it’s pumpkin time!  Time to decorate, craft, and cook with pumpkins.  Fall is my favorite time of the year but it just doesn’t last long enough.  Hopefully some of you like pumpkin recipes because I will be sharing a few of my favorites. This cookie recipe is from my SIL (sister-in-law) but I tweaked it a bit. They are on the healthy side with the oats added and less sugar, plus only one egg. But if you make them a meal it really doesn’t matter how healthy they may be (oops). Make these Autumn inspired cookies and bask in the season.

Recipe

1/2 cup of butter softened
1 cup brown sugar
1/2 cup of granulated sugar
1 cup of pumpkin puree not pie filling
1 egg
1 tsp. vanilla
1 tsp. cinnamon
1/2 tsp. salt
2 cups flour
1 cup of oats quick or rolled
1 tsp. baking soda
1 1/2 cup chocolate chips

Directions:

Cream butter and sugars together until light and fluffy. Beat in egg and vanilla. Add pumpkin and stir well. Add all dry ingredients and stir well until all combined. Drop by spoonfuls onto cookie sheet and bake at 350 degrees for 15-25 min. depending on how big you make your spoonful. After baked cool 10 min.then remove and cool on cooling rack.

Note: These cookies like to stick so make sure when you remove them use a good thin metal spatula or use parchment paper so they won’t stick.   If you use a nylon spatula the cookie may roll up and crumble on you.

    I’ve been waiting somewhat patiently to start making pumpkin goodies. : ) I’ll be adding this to my “to make” list. By the way, I’ve got sour dough cinnamon roll dough raising in my kitchen, about to become cinnamon rolls. I’ll let you know how they turn out. : )

  9. Your recipes are really delicious. I should try all of these since they sounds great and yummy! This oatmeal cookie recipe is also yummy and tempting. It becomes yummier when you added chocolate chips on the recipe.

    • thanks so much for the nice compliments. The pumpkin oatmeal cookies would not be the same without the choc chips, well maybe I should leave them out because that’s what makes me eat more.

    Just wondering what elevation you live at so I can adjust for altitude if needs be. I am in Salt Lake City , Utah and the elevation is about 4250 feet above sea level. Thanks! The cookies look great!
