Simplest Lasagna Ever!

August 20, 2010

Are you ever needing something good for potluck or for your family but you hardly have anytime?  This is the recipe for you then, I know what your thinking lasagna isn’t quick and easy, well it can be.   First of all, this isn’t really cooking its assembling.  You can make your own sauce or use a store-bought favorite, add meat to the sauce or not, use ricotta cheese or whatever type you always use.  I’m going to show you the recipe I was shown how to make and I know its delicious.  The lady that made this recipe for me was our camp cook at girl’s camp the last two years I went with my daughter, and we ate very well.

Follow along here, it takes about 10 min. to assemble and put in the oven.  It’s true,  there’s no cooking of the lasagna noodles and no they aren’t the ready to use type either, just the regular ole ones you buy.

The Recipe:
1 package of lasagna noodles
2 jars of favorite spaghetti sauce
1 pound of shredded cheese
32 oz. of cottage cheese

Directions:

  1. In a 9 X 13 in. pan. or 11 X 7 in. pan (cut the ingredients down if using the smaller pan) spread about 1 cup sauce on the bottom then layer 3 of the lasagna noodles (do not cook the noodles).  I just used the ugly broken pieces, works fine.
  2. Spread a layer of cottage cheese on top of noodles then add a layer of shredded cheese.
  3. Spread about a cup or more of sauce on top of cheese and start the process over.
  4. The top should end with noodles and the rest of the sauce and shredded cheese on top of that.

Important Part-
Tear a piece of foil a little bigger than the pan. Spray one side with cooking spray. The side you sprayed put face down on top of the lasagna and seal the foil completely around the pan. The foil can not let air out or the noodles will not cook correctly.

Bake in 400 degree F oven for 1 hour.

Cool for 1 hour in the oven, and your done.  Wasn’t that easy.
