What do you do with left over grilled steak? If you microwave it, it turns to rubber, if you re-grill it, it gets tough. Well, my husband has the perfect solution for leftover steak “quesadillas”. He is pretty good at making them, it’s his “go to” meal. The other night I was busy so he made him and the kids dinner and called me into see what he was doing and show me how good these were going to be. They were good I have to admit so I’m sharing his steak quesadilla recipe.
1 left over grilled steak cut into bit size chunks
2 – 3 T of homemade black bean salsa
Butter one side of your tortilla. Lay the tortilla in the skillet, on half add cheese, black bean salsa and steak then cheese again on top. Fold the other half over and cook on medium-high for about 2-3 min. Turn over and cook again for 2-3 min. or until nicely browned. Garnish with sour cream, salsa or guacamole.
