Banana Coconut Lime Ice Cream

Ice cream is seriously one of life’s pleasures in my life.  I created this creamy banana ice-cream  with a background flavor of coconut and hint of lime,  with the chopped roasted walnuts, its delicious.  It is a must try recipe with simple ingredients and no previous ice cream making experience required!

Banana Coconut Lime Ice Cream

1  14 oz. can of lite coconut milk

1 can of sweetened condensed milk

2 cups of whipping cream

1 cup milk

2 eggs

1 cup sugar

1 lime-juice and zest

2 ripe mashed bananas

ice cream machine

ice

rock salt

In large bowl (I use old half-gallon ice cream bucket from the grocery store) beat the eggs on high-speed until light yellow then slowly add sugar and beat well.  On medium speed slowly add cream and milks beating well.  Last beat in bananas, lime juice and zest.

Pour into a 1 gallon ice cream bucket.  Fill the ice cream maker with ice and rock salt according to manufactures directions.  Turn on and let the machine go until it stops on its own.  Eat right away or put in another container and freeze.

If you like nuts don’t forget to roast them it brings out the true flavor of them.

Makes about 2/3 of a gallon.
