Stuffed French Toast with Berry Syrup

What’s for breakfast?….Stuffed French toast! Have I mentioned my favorite meal is breakfast, well I love it and I could eat it 3 times a day.

Saturday is about the only day we eat a nice breakfast because of school during the week.  I came up with this  recipe not too long ago and I know it”s probably not new to most of you but I thought someone out there may not have seen it yet.

Stuffed French Toast

Bread (French is good but whatever you like)

6 eggs

1/4 cup orange juice

1/8 cup of milk


strawberry cream cheese or plain

1 1/2  cups frozen mixed berries or fresh

1/2 cup frozen blueberries

1/3 to 1/2 sugar

corn starch


First start the berry syrup by dumping all the berries into a medium size saucepan add sugar and cornstarch, dash of nutmeg and cook on med. heat.  While that is cooking get a small 11X7 in.  glass pan and crack the eggs into it.  Add couple of dashes of cinnamon and then milk and orange juice whisk with fork.

Continue to stir the berry mixture, mash berries with fork or emulsifier and cook on low heat.

Get the bread ready by spreading one side with strawberry cream cheese and put another piece of bread on top like a sandwich.  If I’m out of strawberry cream cheese I will spread plain cream cheese and then add a layer of jam.

Get your griddle ready or pan, spray with cooking spray or melt butter and spread around.

Dip the sandwiches in the egg mixture so it is well coated on both sides.  Depending on the texture of the bread your using depends on the amount of time in the egg mixture.  Harder French bread can sit a 30 seconds in the egg mixture but a soft white bread will get to soggy if left in too long.  After it is coated well cook on hot griddle until the bottom is golden brown then flip so the other side can get golden brown.

Serve hot with butter and hot berry syrup!

Makes 5 stuffed toast.

    I’m going to have to try this it sounds so good! I make a similar version using canned apple pie filling. I love your blog, the pictures are great perfect for any level of cook.
