Strawberry Delight

April 23, 2010

This recipes is one of my childhood favorite dessert recipes.  My mom wasn’t big into making desserts but this was one  was the best!  It’s easy to make and feeds a crowd. Strawberries are delicious this time of year (well anytime for me).  Hope you enjoy this family favorite.

Strawberry Delight

1 cup of hot water (boiling)

1/2 cup. sugar

1 small package of strawberry jello

1 loaf of angel food cake

2 cups sliced strawberries

1  1/2 cup of whipping cream

In a 9X13 in. pan tear angel food cake into pieces, set aside.  In 4 cup  glass measuring cup heat water to boiling in microwave oven, add jello and sugar and stir until dissolved.  Put in the refrigerator to cool.  Meanwhile wash and cut strawberries up.  When jello is cool not set add the strawberries to it.

In another bowl whip the cream until soft peaks not stiff.  Slowly add strawberry jello mixture to the whipping cream and stir.  Now pour this mixture over the angel food cake and stir well until all pieces of cake are covered with mixture.  Refrigerate until firm 4 to 5 hours or overnight.

Garnish with a dollop of cream and fresh berries.

Note:  I have made this sugar-free for diabetics using splenda with sugar-free jello and sugar-free angel food cake and it’s still delicious.  To make it lower in fat you can use cool whip instead of whipping cream.
