California Club Ciabatta

What’s for lunch? Surprise the ones you make brown bag lunches for with something delicious.

Whole grain ciabatta bread with roast chicken, bacon, spinach,tomato and avocado basically a BLT + chicken and avocado.  I love how just a few simple ingredients used on Italian ciabatta bread makes you feel as if you went out to a cafe or specialty sandwich shop. Ciabatta bread is available now at most grocery stores and cost about as much as good loaf of bread.  Ciabatta bread is made in many varieties from plain white, whole grain, and garlic herb just name a few. The great thing about this type of bread is you are able to make the sandwich the night before and it won’t get soggy, great time saver  for busy mornings.

California Club Ciabatta

roast chicken-I used left overs

bacon cooked crisp

spinach leaves

sliced tomato

sliced avocado

mayonnaise

ciabatta bread rolls

Slice bread and spread with desired amount of mayonnaise.  Starting with roast chicken lay on the bottom of bread roll, then add bacon, spinach, tomato and last avocado.  Salt and pepper the avocado and put the top piece on.  Enjoy!
